
Allspice liqueur (pimento dram) is a rum-based liqueur steeped with allspice (pimento) berries.
Allspice on a rum base with sugar, so the rebuild pours all three: an aged rum with ground allspice and syrup, half a barspoon at a time. Bitters bring the spice in dash strength and no sweetness at all.
A concentrated unsweetened tincture measured in dashes; the liqueur, the dram, is sweet and poured in measures. The flavor is shared, the role and the sugar are not — swap them and the drink is either bone dry or twice as sweet.
Made by macerating the dried unripe berries of Pimenta dioica in rum over a sweetened base. Allspice’s dominant aromatic is eugenol — the same oil that gives cloves their scent.
