Tequila is distilled from blue agave, offering a flavor profile that ranges from the bright, vegetal notes of unaged Blanco to the oak-influenced vanilla of Reposado and Añejo. Along with its smokier cousin, Mezcal, it is the backbone of the Margarita, the grapefruit-topped Paloma, and agave-based riffs like the Oaxaca Old Fashioned.
