Bubble gum syrup is a flavoured simple syrup: a sugar-and-water solution carrying an added artificial bubble-gum flavouring.
Sweet artificial bubble gum dominates — a candied, slightly medicinal confectionery note built on layered fruit esters, over a plain sugar body.
Reached for when a drink is meant to taste of bubble gum, it works as both sweetener and flavour accent: stirred or shaken into the build and dosed by the small measure, since its sweetness and aroma are both concentrated.
As a minor accent, any plain simple syrup can cover the sweetness and body, but the bubble-gum aroma itself cannot be rebuilt from fruit syrups or sugar; when that flavour is the point of the drink, only another bubble-gum flavouring will do.
Its base is an ordinary sugar syrup — sucrose dissolved in water — set apart only by the bubble-gum flavouring folded in. That flavour is a composed, artificial confectionery profile rather than any single natural source, typically built from a blend of fruit-ester notes such as banana, cherry, strawberry and wintergreen formulated to mimic chewing gum.
