
Oude genever is a traditional Dutch grain spirit. "Oude" means "old," and it refers to the historical recipe style, not to barrel aging as is often assumed. At heart it’s a blend of neutral spirit infused with juniper and spices and malt-wine (moutwijn) — at least 15% of it by law.
Another oude genever works one for one, and so does Bols Genever, with over half its spirit from malt wine. Korenwijn, with at least 51% malt wine, is at least as malty and goes one for one. Without any genever, mix gin with a smaller share of unpeated whiskey and a little syrup, tasting as you go. It is a stand-in, not a match.
London dry gin
Neutral spirit redistilled with botanicals, juniper first, and no malt wine: one for one, the drink comes out lighter and sharper.
Jonge Genever
It has from 1.5 to under 15% malt wine and up to 10 g of sugar per liter. Oude has at least 15% and up to 20 g. It makes a lighter, cleaner drink.
Oude carries no more than 20 g of sugar per liter — a dry spirit rather than the liqueur it is sometimes taken for.
