Pumpkin spice syrup is a liquid sweetener, while pumpkin pie spice is the dry ground-spice mixture that flavours it. The syrup adds sweetness and body along with aroma; the dry blend contributes only aroma and no sugar or liquid volume.
Pumpkin spice syrup carries its flavour from pumpkin pie spice — typically cinnamon, nutmeg, ginger and clove, often with allspice — dissolved into a sugar-and-water base; despite the name, the blend contains no pumpkin, so the syrup can be made without any. Some versions add pumpkin puree and vanilla, but that is a formulation choice rather than a category requirement, and it is not a regulated or legally defined product.
Versions containing pumpkin puree or dairy-adjacent additions are perishable — refrigerate them; a plain spiced sugar syrup keeps far longer.
