Kümmel is a colorless liqueur, usually sweet, flavored mainly with caraway, plus fennel and anise.

Swaps straight in. Sweetness varies by brand, so add or hold back sweetener to taste.
Homemade sweet kummel
Mix 3 parts 40% caraway aquavit with 1 part 2:1 syrup. Use as much of the blend as you would kummel.
Aquavit
A dry, strong spirit with almost no sugar. It works in the same amount, but makes everything much drier.
Storage
In the sweeter kummels, sugar can crystallize and settle at the bottom of the bottle over time. Gentle warming and shaking redissolve it.
