
Lime cordial is a non-alcoholic sweetened lime-juice concentrate of lime juice, sugar and water, diluted to taste before drinking.
Sweet and rounded, with a muted tartness and a distinctly concentrated, preserved lime aroma rather than the clean sour bite of fresh juice.
Functioning as a combined sweetener and lime-flavour concentrate, it is added in small measures and shaken or built into a drink, shifting sugar and acid balance together; because it is already sweetened and acid-balanced, it is not a like-for-like swap for fresh lime as an acid source.
No single ingredient replaces it cleanly, since it must deliver sweetness and lime flavour at once; a mix of simple syrup with fresh lime juice or citric acid approximates it, though it yields a fresher, less concentrated character than the preserved-lime cordial note.
Fresh lime juice
Fresh lime juice is unsweetened and sharply acidic; lime cordial is sweetened and its acidity is muted by sugar, giving a rounder sweet-tart flavour rather than a clean sour bite.
Lime simple syrup
A plain lime simple syrup is essentially sweetened lime without the concentrated, often zest-derived and acid-adjusted character of a cordial, which is more tart and aromatic than a straight syrup.
Lime cordial combines concentrated lime juice with sugar and water, and may carry citric acid and preservatives; regional recipes differ, with some using sugar and others high-fructose corn syrup plus added colour. As a British 'cordial', it is a concentrate blended with water or another liquid to taste, thinning as it is diluted.
Refrigerate once opened and use within the period marked on the bottle.
The style originated in Britain in the 1860s from preserving lime juice as an antiscorbutic for sailors, with a Leith ship chandler patenting a sugar-preservation process in 1867 — the first commercially produced fruit concentrate.
