
Peach schnapps is a peach-flavored liqueur on a neutral grain spirit, usually clear and strongly sweet.
It is very sweet and quite weak, so a drier or stronger bottle changes two things at once. Put the sugar back with syrup half a barspoon at a time, and if the substitute is twice the strength, pour half and make up the volume.
Peach eau-de-vie and Obstler
Distilled from fermented fruit and bottled dry, at around 40% against the schnapps’ 15 to 20%. It brings peach and no sugar, so the recipe has to supply the sweetness.
Crème de pêche
A French peach liqueur, generally made with more fruit and less confectionery flavoring. Softer and rounder, and a straight swap by volume works.
It will not spoil, and it is the style that fades soonest: the fruit aroma is the volatile part and the color goes with it. Closed, cool and out of the light. A long-open bottle is a weaker version of itself, not a bad one.
