Cocktails with Peach-strawberry cordial
Peach-strawberry cordial is a concentrate of peach and strawberry with sugar and acid, so it is tart as well as sweet.
How it's used
Strawberry gives the color and peach the perfume. Commercial blends vary in which fruit leads, so taste before you pour. It suits lemonades, spritzes and other long drinks.
Substitutes for Peach-strawberry cordial
Summer fruits cordial
A ready-made raspberry or mixed berry concentrate works one for one, just with a different fruit.
Mixed syrups
Blend equal parts peach and strawberry syrups. They are roughly twice as sweet as cordial, so use half the volume, add a little lemon juice and make up the rest with soda water.
Won't work. It brings alcohol and sugar but absolutely none of the fresh fruit flavor.
Storage
A sealed commercial bottle keeps for months; once open, refrigerate it. Homemade lasts a couple of weeks in the fridge. Peach fades first, so an aging batch drifts toward strawberry.
