Cocktails with Peppermint bitters

How it's used
Two dashes bring a cold, clean mint that crème de menthe cannot, because there is no sugar underneath it. Chocolate, coffee and festive drinks all take it.
Substitutes for Peppermint bitters
Peppermint extract
Start with one drop and taste, since too much turns the drink medicinal. It adds no bitterness.
A barspoon brings the mint and a little sugar.
Without bitters
Leave the dashes out. The drink loses only the cool mint.
Fresh mint infusion
Gives a softer, weaker mint, so it takes a barspoon or more.
Storage
It will not spoil, but the menthol-rich oils fade with age and air. Keep the bottle closed; an old or long-open one loses its punch.
