
Peach crème liqueur is a sweet, low-strength peach liqueur, made by macerating peaches in neutral spirit and heavily sweetening them. The prized versions use pêche de vigne — small, dark "vineyard peaches" grown among the vines.
Heavy sweetening is the style, and everything nearby is drier and thinner. Sugar goes back with syrup; the density does not go back at all.
Real steeped fruit but less sugar, so it pours drier. The drink keeps its peach and loses some weight: put a barspoon of syrup back and leave it there.
Flavoring and sugar on a neutral base, with no steeped fruit. It is candied and thinner: the drink loses the crème style’s weight, and you have to build it back with syrup.
Peach is the most delicate of the fruit crèmes and the one that most rewards a small bottle. Cold slows the fade; nothing stops it. An open bottle a year old still works as a sweetener and no longer tastes much of peach.
