Cocktails with Pernod
Pernod is a French anise liqueur, close to pastis but with very little licorice. It is yellow-green in the bottle and turns milky white with water or ice.

Substitutes for Pernod
Pastis or anise spirit
Ricard or Herbsaint swap dash for dash. They carry slightly more licorice, but at small measures the difference barely shows.
Much stronger and more intense. Use about half as many dashes.
Storage
Anethole, the compound behind Pernod's anise taste and its milky clouding with water, is sensitive to light. Once opened, keep the bottle closed, cool and out of the sun.
