
Cacao & coffee spiced rum is a flavored rum — a rum base with cacao and coffee added, usually lightly sweetened.
Three flavors ride on one spirit here, and a plain rum brings only the spirit. Pour the other two separately — about 5 ml each of a coffee and a cocoa liqueur per 40 ml of rum — and the drink lands close without the sugar of the original.
Coffee liqueur / crème de cacao
Low-strength and heavily sweetened, where sugar leads and the spirit follows. Swap one in and the drink loses most of its proof: pour about half again as much and cut the syrup entirely.
Unflavored dark rum
No cacao, no coffee, no added sugar. The drink comes out drier and noticeably sharper: to put it back, add a barspoon of coffee liqueur and a pinch of cacao.
