The lemon here is aroma rather than acid. Strength and aroma arrive separately in this bottle, and putting them back together is not hard.
Often confused with
Steep the peel overnight and you have the same thing, cleaner tasting; neither carries acidity, so a sour still needs its juice.
The same peel, sweetened and at half the strength, and pour half the measure and take the sugar down.
Storage
Citrus oil is the whole product here, and citrus oil oxidizes. Over a year an opened bottle drifts from bright lemon toward something duller and faintly resinous, and no amount of cold storage stops it. Buy the size the bar will actually use.
