
Vodka is a distilled spirit rectified from agricultural ethyl alcohol to a high strength, leaving it largely without distinctive character, aroma, taste or colour.
Almost no aroma to speak of; on the palate it is clean and near-flavourless, with a warming alcoholic bite and only a faint hint of its base material.
The workhorse base measure, poured as the largest pour and built, shaken or stirred; its neutrality lets other ingredients lead, and in smaller amounts it lengthens or strengthens a drink without adding character of its own.
As a base measure, only another high-proof neutral spirit preserves the drink — the point is clean, flavour-free strength, and a characterful aged or botanical spirit breaks any recipe that relies on that blank canvas. Where vodka is only a minor strengthening or lengthening pour, almost any near-neutral spirit will do. A flavoured vodka such as a citron or vanilla style keeps the strength and clear appearance but sacrifices neutrality, so it substitutes only when that added note is welcome.
Neutral spirits / grain spirits
Vodka is a finished, bottled spirit type with its own labelling requirements and filtration and treatment rules, whereas 'neutral spirits' is the broader legal class of high-proof distillate from which vodka and many other products are made.
Fermented from an agricultural raw material — traditionally grain, especially wheat, or potatoes, though molasses, grapes or sugar beet also serve — vodka is distilled to a high-strength neutral spirit and reduced with water rather than wood-aged. It is commonly purified by filtration, frequently through activated charcoal, to strip residual congeners and heighten neutrality. Flavoured versions add natural or compounded flavourings to a neutral base without ceasing to be vodka.
Vodka originated in eastern Europe, with Russia and Poland both historically claimed as its place of origin; the name derives from a Slavic diminutive meaning 'little water'.
