Passion fruit liqueur is a tropical fruit liqueur made by blending passion fruit juice or pulp with a spirit base and sugar.
Bols Passion Fruit works one for one: 17%, with about 170 g of sugar per liter. De Kuyper's is sweeter and lighter, 228 g at 15%, so the drink comes out a touch sweeter. With no liqueur, use 10 ml of passion fruit purée, 8 ml of vodka and half a barspoon of 2:1 syrup for each 20 ml.
Passion fruit purée or juice
All fruit, no alcohol, and more sour: Boiron's has no added sugar, while sweetened brands carry about 19–22 g per 100 g. One for one, the drink turns weaker and tarter, so rebuild it as described.
A widely sold passion fruit liqueur, 17% with 146–156 g of sugar per liter, a little less sweet than Bols. It swaps in one for one.
Passion fruit is built on sulfur-bearing esters that are extraordinary when fresh and disappear quickly. This is a bottle to buy small. Six months open and it reads as generic tropical sweetness.
