Tips

Use the 50 ml of passion fruit purée and keep fresh fruit out of the shaker; the fresh half is only the garnish.
A good purée keeps the drink tart and fragrant; a sugary passion fruit syrup makes it cloying.
The 50 ml of Champagne goes alongside in its own chilled shot glass, never into the drink itself.

This is the International Bartenders Association's specification of the Pornstar Martini, which the IBA added to its official list in 2024 under the New Era category.

The Pornstar Martini itself was created in 2002 by London bartender Douglas Ankrah at his bar Townhouse and had grown into the UK's most-ordered cocktail by 2018.

Is a Pornstar Martini shaken or stirred?

Shaken. A hard shake with ice chills the passion fruit purée and whips air into it, which gives the drink the light foam it is known for.

Why is it called a Pornstar Martini?

Creator Douglas Ankrah named it in 2002 because he thought it was "something that a porn star would drink," and later denied the name was meant to be sexual. It is not a true martini either; like many modern drinks, it just borrows the word.
