
Amontillado sherry is a Spanish fortified wine that begins aging under a layer of flor yeast, then continues oxidatively, giving it a unique dual character. Historically favored in Andalusia, it is often referenced in literature, most famously in Edgar Allan Poe’s The Cask of Amontillado. Best stored in a cool, dark place and consumed within a week once opened.
Nutty, dry, with oxidative complexity.
Great in classic cocktails like the Bamboo or Adonis. Can also be sipped neat or used to add depth to spirit-forward drinks.
