
Fino sherry is a pale, bone-dry fortified wine from Andalusia, aged under a protective layer of flor yeast.
Flor is the thing to preserve: only wines aged under it stay pale, saline and bone dry. Anything oxidative shifts the drink in color before it shifts it in taste. Check the sweetness separately — neighboring grades in the same family run noticeably sweeter.
Manzanilla ages under flor on the coast at Sanlúcar, which leaves it a shade lighter and more saline. In a drink the difference is small and always in the direction of salt. It swaps measure for measure and the drink barely notices — only the salt line moves.
A fino that lost its flor and finished in contact with air: amber, nutty, fuller. It darkens a pale drink and swaps the saline edge for weight, so it works where color does not matter and not in a rinse.
It oxidizes fast once opened: refrigerate and drink it within the week, the shortest-lived of the sherries. The flor that protected the wine in the barrel does nothing for it in the bottle.
