Soft and juicy, with thin-skinned drupelets that collapse readily and seeds that add a faint crunch; the flavour is sweet but distinctly tart, carried by a high, unmistakable floral-fruit aroma.
How it's used
Bartenders muddle them to release juice, colour and aroma into the build, drop a few whole into a shaker, or perch them on a pick or rim as a fragile garnish. The hollow, easily crushed structure suits muddling but makes them poor for firm, long-lasting garnishes; a small amount supplies fresh tartness and ruby tint.
Substitutes for Fresh raspberries
Where raspberry is a garnish or light accent, raspberry sugar syrup carries the same defining aroma and colour but loses the fresh tartness and pulp-and-seed texture and adds sweetness to balance out; fresh strawberries muddle similarly and supply comparable red colour and fresh acidity but do not reproduce the specific raspberry aroma. Where raspberry is the headline flavour, no unrelated fruit or generic syrup preserves it.

A picked raspberry is hollow because its drupelets separate from the core, while a blackberry keeps its core and stays solid. Raspberries are typically red and more tart-aromatic; blackberries are darker and often milder and sweeter.
