How it's used
Reached for when a drink needs assertive vegetal bitterness and gentian aroma, it works either as a bittersweet backbone measure or, in a barspoon, as a bittering accent stirred into a build.
Substitutes for Gentian liqueur
As a barspoon bittering accent, another gentian-forward bitter liqueur or a gentian-heavy amaro can stand in, since the earthy, dry-floral gentian-root bitterness and aroma must be preserved together and cannot be manufactured from non-gentian botanicals; lost sweetness can be topped up with sugar or syrup. As a defining backbone measure it is not substitutable.
