Amaro is a family of Italian herbal liqueurs, bittersweet and deep brown. It’s traditionally served after a meal as a digestivo. Less one drink than a whole spectrum — from gentle and floral to intensely bitter.

Substitutes for Amaro
One amaro rarely replaces another without shifting the balance, so match the substitute to the style, not the name. A medium, caramel amaro like Averna swaps for something similar, such as Ramazzotti; a fierce fernet, only for another fernet. Let the flavor the drink needs be your guide — pour a fierce Fernet-Branca in place of a light amaro and you don’t just change the balance, you make a different drink.
Often confused with
Vermouth
A fortified wine flavored with wormwood against a sweetened spirit-based liqueur. Vermouth is lighter and less bitter, so it lengthens a drink where an amaro would season it.
Fernet
A style inside the family, and the hardest end of it: menthol and bitterness with little sweetness to cushion them. Where a soft amaro seasoned the drink, a fernet takes it over — pour about a third as much and add syrup back.
Red bitter liqueur (Campari and kin)
Bitter but not herbal-sweet, and built on gentian rather than a wide botanical mix. The drink comes out sharper and drier and loses the caramel depth — a barspoon of syrup covers part of it, the complexity none.
