Homemade hazelnut liqueur
Mix three parts vodka, two parts hazelnut syrup and one part water. It comes out close, though without the cocoa and coffee notes.
Three-quarters of the measure keeps sugar and strength close, and the drink tastes of marzipan rather than roasted hazelnut.
Storage
Sugar and alcohol both preserve it, so an opened bottle keeps for years and quietly loses its top aroma. House-made infusions are another matter: the nut oil goes rancid, and that is what limits them to a couple of months — not the sugar.
