Sambuca is a clear Italian anise-flavored liqueur made by distilling star anise and related botanicals with neutral alcohol, sugar, and water. It is classically served as a digestif, often “con la mosca” (with coffee beans) and sometimes lit briefly to release aromatics. With a strong anise and sweetness profile and relatively high strength, it can easily dominate a drink. Variants include red and black sambuca, which add spices or darker botanicals.
Sweet, strong anise, slightly herbal.
Commonly served neat or with water; in cocktails used in small amounts to add a pronounced anise note to sours, coffee drinks, or creative shots.
