A Collins is a tall, refreshing sour stretched long with soda — base spirit, lemon juice and sugar poured over ice in the glass that bears its name, then topped with club soda. The Old Tom gin Tom Collins is the archetype; make it with London dry gin for the John Collins, swap in vodka for a Vodka Collins, and whiskey, rum and fruit fill out the rest. Essentially a fizzy, elongated sour, it's one of the easiest classics to build at home.
