Berry Lemonade

Berry Lemonade is a non-alcoholic highball of raspberry and blackberry purée, lemon juice, and vanilla syrup topped with soda water. Tart lemon leads, berry purée rounds it into something juicier than plain lemonade, and vanilla syrup leaves a soft, creamy sweetness under the fizz.

- Pre-chill a glass
- Pour all ingredients into the ice-filled glass and briefly stir: Raspberry purée 25 mlBlackberry purée 25 mlSoda water 100 mlLemon juice 20 mlVanilla syrup 20 ml
- Garnish with a seasonal berry
Tips
- Both purées go straight in as the card lists them; strain yours beforehand only if it is seedy enough to cloud the soda.
- Build over ice in the order the card gives and stir once, briefly — everything goes in together rather than being layered.
- Add the soda water last and pour it gently down the side of the glass to preserve carbonation, giving a livelier finish than stirring it in.
- Give the drink one slow stir with a bar spoon just before garnishing with seasonal berries, enough to marry flavors without knocking out the fizz.
