
Lemon juice is the fresh-squeezed juice of the lemon, the high-acid citrus that sours most classic cocktails.
If there is no lemon, lime goes in at the same measure and makes a sharper, greener version of the drink rather than a broken one. The acid is the easy part: any citrus carries roughly the same load, and a citric acid solution carries it with no flavor at all. The aroma decides whether the drink is still the drink, so a swap here changes its character instead of repairing its balance.
Bottled lemon juice
Preserved with sulfites or pasteurized, and flat in aroma; some brands sweeten it, which quietly rewrites every sour on the list.
Lime juice
Equally acidic and completely different in aroma, and recipes name one on purpose; the substitution is a choice, not a fix.
Squeeze to order. Sealed and refrigerated, the juice holds its acidity for a couple of days and loses its aroma the first evening. Whole lemons are commercially stored at 10–13 °C, warmer than a domestic fridge, and the drying and hardening at the ends is chilling injury as much as age. Citrus is warmed above 10 °C before commercial extraction, which is why bars bring out a shift’s worth ahead of service.
