Picador

Shake ∙ 3 min ∙ 25.5% ABV ∙

The Picador is a shaken tequila sour of reposado tequila, triple sec, and fresh lime juice, strained up into a chilled glass. Crisp and cold with a silky texture, the citrus cuts sharp against a mellow oak-tinged backbone, finishing clean and brisk.

Ingredients

Servings
  • Tequila reposadoTequila reposado45 ml
  • Triple secTriple sec20 ml
  • Lime juice (freshly squeezed)Lime juice (freshly squeezed)20 ml

Garnish

  • Lime twistLime twist

Instructions for 1 serving

  1. Pre-chill a glass
  2. Shake all ingredients with ice: Tequila reposado 45 ml · Triple sec 20 ml · Lime juice 20 ml
  3. Fine strain into the chilled glass
  4. Express a lime twist over the cocktail and use as garnish

Tips

  • Use reposado, not blanco — its oak notes hold up against the triple sec instead of getting washed out.
  • Pre-chill the coupe before straining so the drink stays cold without extra dilution from ice in the glass.
  • Fine-strain to keep any pulp or ice shards out, then express the lime twist over the top to release its oils before garnishing.

History

The Picador appears in William J. Tarling's Cafe Royal Cocktail Book, published in London in 1937, where it is listed as tequila, Cointreau, and lime or lemon juice in a 2:1:1 ratio, shaken. That recipe uses the same spirit and proportions later associated with the Margarita, but Tarling's book predates the first known published Margarita recipe by roughly sixteen years, making the Picador one of the earliest printed tequila sours of its kind. Nothing in Tarling's book records who created the Picador or why, though its name follows the bullfighting theme he gave several other tequila drinks in the same collection, such as the Toreador and the Matador.

Because the Picador so closely matches the later Margarita in build, some historians treat it as a possible forerunner, suggesting the Margarita may have been an existing drink renamed rather than invented from scratch, though this remains speculation. The Margarita itself has a disputed origin, with competing claims placing its creation in Mexico or Texas in the late 1930s and 1940s; unlike that drink, the Picador is traditionally served without a salt rim. The Picador's defining difference from the Margarita is simply this absence of the salted glass rim, along with its documented use of either lime or lemon juice.

FAQ

What is in a Picador?

Reposado tequila, triple sec, and fresh lime juice, shaken with ice and fine-strained into a chilled glass, garnished with an expressed lime twist.

What glass is a Picador served in?

A coupe glass, served up with no ice. The drink is fine-strained during the build, so a chilled coupe keeps it cold without watering it down further.

How is a Picador different from a Matador?

A Matador is typically built with tequila blanco, pineapple juice, and lime, giving it a fruitier, tropical profile, while the Picador is a tequila-and-triple-sec sour closer in style to a Margarita, built on reposado tequila for a rounder, oak-tinged base.
