
Lime juice is the sour, highly acidic liquid expressed from green limes, used as a souring citrus ingredient.
Thin and watery in body, finishing on a sharp, clean sourness; the aroma is green and faintly floral, with a slight bitterness alongside the acid.
Squeezed fresh and shaken into the build, it supplies the sour backbone that balances sweeter and stronger components, dosed anywhere from a small accent squeeze to a full sour base measure. Bottled and cordial products are often sweetened or preserved, shifting the balance away from pure unsweetened juice.
As a small accent, another sour citrus such as lemon juice restores the acid level at similar intensity; as a large sour base or where lime is the defining flavour, no substitute reproduces its green, floral aroma.
Lime juice comes from green limes and carries a more floral, slightly bitter aroma, while lemon juice comes from lemons and reads cleaner and sharper; despite similar acidity the two are not freely interchangeable in aroma.
Lime cordial is a sweetened, preserved lime-flavoured syrup, whereas lime juice is the unsweetened expressed juice; the cordial adds sugar and altered aroma and cannot stand in for fresh juice.
