The Dry Pornstar Daiquiri is a shaken rum sour crossing the Dry Daiquiri with the Pornstar Martini, built on gold rum, amaro, passion fruit, vanilla and lime. Tart lime and passion fruit lead, with vanilla rounding the edges and amaro adding a dry, bittersweet backbone that keeps it from tipping sweet — a lively pre-dinner sipper.
The Dry Pornstar Daiquiri comes from Julian de Féral, who adapted the Dry Daiquiri he had learned while working at the Match Bar Group and brought it to Kindred, a members' club in West London. As its name signals, it is a cross between that Dry Daiquiri and the Pornstar Martini, another British modern classic, splitting the difference between something sophisticated and something playful. The recipe was documented on Punch in 2014, calling for rum, passion fruit and vanilla syrups, a Bonanto aperitif and lime, served up in a frozen coupette with a passion fruit caviar garnish and a Prosecco sidecar.
Light gold rum, amaro, vanilla syrup, passion fruit syrup and freshly squeezed lime juice, shaken and served up. The amaro is what makes it dry, cutting the passion fruit and vanilla sweetness so the drink finishes bittersweet rather than like a dessert.
Shaken. The fresh lime juice and fruit syrups need hard shaking with ice to chill, dilute and aerate them; stirring cannot integrate citrus and syrup properly. Double-strain into the glass to leave a clean surface.
A coupe glass, served up without ice. Chill the coupe beforehand, since the drink relies on that pre-shake dilution and a cold glass to stay refreshing from the first sip to the last.
A Dry Daiquiri is a stripped-back rum sour that dials down the sugar of a standard Daiquiri, often adding a bitter or aperitif element for a drier, sharper finish. The Dry Pornstar Daiquiri builds on that idea with passion fruit and vanilla.
The Dry Pornstar Daiquiri borrows the name from the Pornstar Martini, a British modern classic built on vanilla and passion fruit. This drink is a cross between that cocktail and the Dry Daiquiri, keeping the passion-fruit-and-vanilla signature over a rum base.
