Irish cream liqueur is a smooth, opaque cream liqueur built on Irish whiskey blended with dairy cream, usually with chocolate and vanilla flavors — Baileys is the original.
Cream, whiskey and cocoa in one bottle, and cream is the half that decides the texture. Building it from parts gets the weight and the sweetness; the aroma of the three together is what will not assemble.
Country cream / wine-based cream liqueur
The base is wine, not whiskey: lower in strength and duller in flavor. The drink comes out softer and slightly watery — obvious in a Mudslide, where the creamy weight carries it, and barely noticeable in coffee.
Two years from bottling, opened or not — the alcohol and the sugar hold the emulsion, so the cream does not behave like cream. Keep it under 25°C and out of the sun; the fridge is a recommendation rather than a requirement. What ends a bottle early is heat or a splash of something acidic finding its way in, and the sign is thickening or separation that no shaking undoes.
