Age category matters: young Calvados carries fresh fruit into the glass, while older bottlings contribute woody length and depth.
Generic apple brandy or applejack shares the apple fruit base and distilled aroma and can hold the high-strength base role, though it lacks the AOC framework — no guaranteed Normandy origin, regulated cider varieties, minimum two-year oak ageing, or the pot-still and perry-inclusive style character, so oak depth and regional complexity may differ. A grape brandy such as Cognac matches the strength but not the essential apple aroma.

Calvados is a protected French AOC apple brandy from Normandy, made from fermented cider under regulated fruit varieties, distillation methods and a minimum two-year oak ageing. Generic apple brandy and applejack carry no such designation and vary widely in raw material and process.
Cider apples drawn from over 100 named varieties — classed as sweet, tart, bitter and bittersweet — are pressed and fermented into a dry cider, then distilled and aged in oak for a minimum of two years under AOC rules. Three appellations exist: AOC Calvados, AOC Calvados Pays d'Auge (double pot-still distillation), and AOC Calvados Domfrontais, which uses single column distillation and at least 30% perry pears.
Calvados originates in Normandy, France, where cider distillation is recorded from the 16th century; the AOC Calvados Pays d'Auge protected name was granted in 1942.
