
Cognac is a French grape brandy — twice distilled in copper pot stills and aged in oak — made only in the Charente and Charente-Maritime, around the town of Cognac, under strict AOC rules. It’s the benchmark of aged grape brandy.
Any aged grape brandy keeps the strength, the oak and the amber, and what it cannot bring is the Charente terroir and the rancio that comes with long aging. In a Sidecar or a Sazerac that loss is small; in anything sipped it is the whole point.
One distillation instead of two and Gascony instead of the Charente: fuller, earthier and rougher at the edge. In a Sidecar that reads as more character and less polish.
Any fruit spirit from anywhere, so the range is enormous — harsh and young to soft and aged. You cannot predict the drink until you have tasted the bottle.
"Cognac" on post-Soviet shelves
Armenian, Dagestani and Russian "cognac" are local grape brandies. In the EU the word is reserved for the spirit from France’s Charente, so a cheap "5-star cognac" and a true Cognac are different things.
