
Fino sherry is a pale, bone-dry fortified wine from Andalusia, aged under a protective layer of flor yeast.
Any other fino swaps in identically. Of its neighbors, manzanilla comes closest, one for one; it is a shade lighter and saltier. A dry amontillado (not a "medium") swaps in one for one but is amber and nutty, so it darkens a pale drink and adds weight. Dry vermouth is close but slightly sweeter, and it trades the saline, nutty edge for herbs.

It oxidizes fast once opened: refrigerate and drink it within the week, the shortest-lived of the sherries. The flor that protected the wine in the barrel does nothing for it in the bottle.
