
Fresh mint leaves are the aromatic leaves of plants in the genus Mentha, a group of perennial herbs in the mint family.
Cool and clean on the finish, with a fresh green herbal aroma; spearmint reads soft and sweet, peppermint sharper and more menthol-pungent.
Bartenders press or gently muddle the leaves to bruise them and free the aromatic oils, working lightly since over-crushing releases bitter chlorophyll; whole sprigs also serve as an aromatic garnish set at the surface where the nose meets it.

Peppermint
Culinary 'mint' usually means spearmint (Mentha spicata), whose oil is carvone-dominant and mild; peppermint (Mentha × piperita) is menthol-dominant, markedly cooler and more pungent, and is generally not the leaf intended in most fresh-mint drink preparations.
Mentha species are aromatic perennials with square stems and paired opposite leaves, and their scent comes from volatile essential oils held in the leaf and stem that release when the tissue is bruised. The market herb spans several readily hybridising species: spearmint, the most common culinary type, is carvone-dominant and mild, while peppermint is a menthol-high hybrid with a sharper, cooling edge.
Highly perishable — it wilts and darkens within days and its aroma fades with age and heat, so keep it cool and use it fresh.
