
Herbal liqueur is a spirit flavored with a complex blend of botanicals, roots, and spices — Green Chartreuse, made by Carthusian monks from a secret recipe of 130 plants, is the defining example.
Two things move at once when you swap: strength and sugar. Everything nearby is weaker and sweeter, so the drink comes out softer and usually needs its citrus rebalanced. Where the recipe leans on the intensity itself, nothing substitutes.
Yellow Chartreuse
Sweeter, more floral and honeyed, and softer in the middle of a drink. It stands in for green when the recipe can take that.
Génépy and other alpine herbal liqueurs
A narrower set of botanicals and a lighter body. The drink comes out clearer and thinner: where Chartreuse held the cocktail together by weight, génépy lets it go — pour about a quarter more.
Sugar preserves as surely as alcohol, so an opened bottle keeps for years and loses aroma quietly. Green Chartreuse is the exception in the category worth knowing: it goes on developing in the bottle, and old bottles are collected for that reason.
