Substitutes for Jamaican aged rum
The first choice, one for one. Jamaican rums get their funk from long fermentation and pot stills rather than from age, so the character stays.
Jamaican overproof rum
Much stronger, so use about two-thirds as much.
Keeps the weight, and the drink is rounder and less pungent. A barspoon of Jamaican overproof per 50 ml brings some of the funk back.
Description
The funk is made in a long ferment with dunder — what is left from the last distillation — and that is where the fruity esters come from.
