
Caribbean aged rum is a spirit distilled from molasses, the dark syrup left after boiling cane down for sugar, and matured in oak, which gives it its weight and much of its flavor. Aging is what separates it from clear white rum: the same spirit at heart, turned amber and rounded by the barrel. ("Caribbean" is loose here — the tradition takes in mainland neighbors like Guyana and Central America too.)
Any aged molasses rum of similar weight does the job; what decides the drink is style, not age alone. A dry, funky Jamaican and a soft Spanish ron sit at opposite ends of the category, and swapping one for the other rebalances the drink whether you meant it to or not. Check that the color came from a barrel and not from caramel.
Unaged, or aged and then filtered clear, so it carries none of the barrel: no vanilla, no tannin, no color. In a stirred drink it disappears where the aged rum was meant to hold the middle, and the sugar has to come down with it.
A dark rum can be caramel-colored young rum with no barrel time behind it. Aged rum earns its weight in wood — so a drink built for body comes out thin on coloring alone, however dark it looks.
Aged rum gets its flavor only from distillation and the cask; spiced rum has spices and flavorings added and is often young rum underneath, so the drink comes out sweeter and spicier with none of the barrel depth.
A pot still keeps the weight and the fruit; a column still gives a lighter, cleaner rum. That is the choice of style. And in the tropics the barrel works faster, so a Caribbean age statement is not comparable to a Scottish one.
