Bitter-almond is the dominant note — a dry, kirsch-like cherry-stone character carried on a high, distinctly distilled aroma, with medium sweetness and low acidity.
Reached for when a drink needs a dry, aromatic cherry lift rather than sweet fruit colour, it works as a small modifier stirred or shaken into the build, dosed in barspoons or fractions of an ounce so its aroma reads without dominating.
There is no true substitute where its distilled Marasca-cherry and bitter-almond aroma is the intended signature; as a small modifier a rough swap may pass, but a red macerated cherry liqueur cannot reproduce either the clear colour or the dry distilled aroma. If a drier stand-in is used, rebalance sweetness with sugar syrup and match strength with a spirit of similar proof.

Maraschino is distilled from Marasca cherries and is typically clear with a dry edge; ordinary cherry liqueurs are made by macerating cherries in spirit and are usually red, sweeter and fruitier.
Its flavour comes from the Marasca cherry, the small, slightly sour fruit of Prunus cerasus var. marasca that grows wild along the Dalmatian coast of Croatia. Unlike most cherry liqueurs it is produced by distillation, leaving it clear rather than red, and is categorised as a fruit liqueur bottled at moderate strength.
Industrial-scale production began in 1759 when Francesco Drioli founded a maraschino factory in Zadar, on the Dalmatian coast, then part of the Republic of Venice and the region historically associated with the liqueur.
