The aroma leads with ripe cherry fruit; the palate is sweet and full of macerated cherry flesh, with low acidity and little bitterness.
How it's used
A sweet, aromatic modifier used to add cherry character and colour. In small measures it accents and sweetens a build; in a larger, flavour-defining pour it becomes the drink's dominant note. Added by stirring or shaking with the other components.
Substitutes for Cherry liqueur
As a small sweet-and-aromatic accent, another cherry liqueur works, or a cherry distillate with sugar added to rebuild the sweetness — but the cherry aroma itself must come from a cherry-derived product. In a large, flavour-defining measure a specific style cannot be swapped: the clear, almond-tinged maraschino character and the red macerated-fruit character do not transfer to each other.
Often confused with
Kirsch (cherry eau-de-vie)
Kirsch is an unsweetened, clear cherry distillate — a brandy — whereas cherry liqueur is sweetened and usually made by infusing or macerating the fruit rather than distilling it. The loose label 'cherry brandy' blurs the two, but a liqueur must carry added sugar.
