Tips

Shake hard with fresh ice for a full 10–12 seconds to chill and dilute the vodka, then fine-strain into the chilled coupe so no ice shards get through.
If you use the absinthe, add just the one dash to the shaker rather than rinsing the glass; that keeps it a faint note behind the maraschino and violette.

History

The Clean Aviation is a variation of the Aviation that replaces the gin's juniper backbone with neutral vodka while keeping the maraschino and crème de violette that define the Aviation's flavor and color.

By most accounts, the Aviation takes its name from that liqueur's pale blue-lavender color, which evokes a clear sky.
