The Fizz is a close cousin of the Collins — a shaken sour of spirit, citrus and sugar lengthened with soda — but shaken first and topped second, often served short and without ice. The Gin Fizz is the benchmark; add egg white for a Silver Fizz, a yolk for a Golden, or shake the famously long Ramos Gin Fizz to a cloud-like foam. The result is lighter and frothier than a Collins.
