  • Sugar syrupSugar syrup20 ml
  • Orange blossom waterOrange blossom water1 ml
  • Vanilla extract/essence (opt.)Vanilla extract/essence (opt.)1 dash
  • Egg whiteEgg white20 ml
  • Single cream/half-and-halfSingle cream/half-and-half20 ml
  • Soda waterSoda water20 ml

Garnish

  • Mint sprigMint sprig

Instructions for 1 serving

  1. Pre-chill a glass
  2. Shake the first 8 ingredients with ice: Old Tom gin 60 ml · Lemon juice 15 ml · Lime juice 15 ml · Sugar syrup 20 ml · Orange blossom water 1 ml · Vanilla extract/essence 1 dash · Egg white 20 ml · Single cream/half-and-half 20 ml
  3. Strain back into the shaker
  4. Dry shake (without ice) to emulsify
  5. Slowly pour 2/3 of the shaker’s contents into the chilled empty glass (no ice in the glass) while simultaneously pouring Soda water 20 ml with your other hand
  6. Leave to settle for 30 seconds
  7. Pour the final contents of the shaker into the glass. As you do so, the head should rise like a soufflé
  8. Garnish with a mint sprig
