• Speyside single malt Scotch whisky60 ml
• Absinthe5 ml
• Lemon juice (freshly squeezed)20 ml
• Lime juice (freshly squeezed)10 ml
• Sugar syrup15 ml
• Egg white20 ml

• Lime wheel

Instructions for 1 serving

1. Pre-chill a glass
2. Shake the first 6 ingredients with ice: Speyside single malt Scotch whisky 60 ml · Absinthe 5 ml · Lemon juice 20 ml · Lime juice 10 ml · Sugar syrup 15 ml · Egg white 20 ml
3. Strain back into the shaker
4. Dry shake (without ice) and slowly pour 2/3 of the shaker's contents from a height into the chilled glass (no ice), while simultaneously pouring soda with your other hand
5. As the final contents of the shaker are poured into the glass, so the head should rise like a soufflé
6. Garnish with a lime wheel
