
Bianco vermouth is a pale, semi-sweet aromatized fortified wine flavored with wormwood and other botanicals.
Another bianco or blanc vermouth swaps in one for one, though sweetness varies by brand. Lillet Blanc works one for one; the drink comes out drier and fruitier, with a light quinine edge. Dry vermouth with a scant barspoon of 2:1 syrup per 25 ml brings the sugar back but not bianco's vanilla note. Rosso vermouth matches the sweetness but darkens the drink and adds a darker, spicier note.
Under EU rules a vermouth labeled dry has under 50 g of sugar per liter; bianco bottlings run about 130–170 g.
About as sweet as bianco, around 150 g per liter for Martini Rosso, but colored red-brown with caramel.
Oxidizes once opened — refrigerate and use within six weeks.
