The Jungle Bird is a tropical rum sour of dark rum, a red bitter such as Campari, pineapple and lime juice, and demerara syrup, shaken and served over ice.

Pre-chill a glass
Shake all ingredients with ice: Dark rum 45 mlRed bitter 22 mlPineapple juice 45 mlLime juice 15 mlDemerara syrup 15 ml

Tips

Pineapple juice foams when you shake it hard, so give it a good shake with ice and strain over fresh ice; the light head sits on top.

History

In 2024 the International Bartenders Association put the Jungle Bird on its official list, in the New Era category. The IBA specification standardizes the drink's proportions of dark rum, Campari, pineapple juice, lime juice, and demerara syrup for competition and training use worldwide.
