
Pink grapefruit juice is the juice pressed from a red- or pink-fleshed grapefruit, a tart citrus juice with a distinct bitter edge.
Grapefruit does two jobs at once, souring and bittering, and every substitute drops one of them.
White grapefruit juice
Sharper, more bitter and less sweet. The classic recipes were written for it, so a Paloma made with pink needs less sugar.
Grapefruit soda
Sweetened, carbonated and much weaker in grapefruit. It lengthens a drink; the juice sours one.
Fresh juice keeps a day refrigerated and turns bitter as it sits, which is the opposite of most juices — the delayed bitterness of limonin develops after pressing rather than fading. Squeeze it to order where you can. Whole grapefruit keeps six to eight weeks at 12–14 °C but takes chilling injury below about 8 °C, so a cool room suits it better than the cold shelf.
