
Red bitter is a bittersweet Italian-style aperitivo liqueur, crimson-coloured, made by macerating botanicals in neutral alcohol and sweetening with sugar.
A syrupy medium body carries a sustained, drying bitterness through the finish, framed by bitter-orange and herbal-root aroma over a restrained sweetness.
Bartenders pour it as a base or co-base measure, stirred or built, where its high bitterness, aromatic bitter-orange lift and crimson colour set the drink's character; in smaller doses it works as a bitter accent modifier.
In a spirit-forward base measure a red bitter is essentially only replaceable by another red bitter, since the crimson colour, gentian/bitter-orange bitterness and herbal aroma must all be preserved at once; a bitter orange-and-gentian aperitif liqueur such as Amer Picon shares the core bitterness but is amber-brown and sweeter, losing the signature red and drier profile. A drier or lower-proof stand-in can be rebalanced with sugar syrup and a little neutral spirit, but bitterness itself cannot be added back from sugar or colour.
Lighter aperitivo liqueur (Aperol-style)
Red bitters are more bitter, drier and stronger, typically 20–28% ABV, while the lighter orange-red aperitivo liqueurs are sweeter and much lower in strength, roughly 11–18% ABV. Both are bright orange-to-red Italian aperitivo liqueurs used in similar drinks, which is why they are often confused.

Herbs, roots and fruits are macerated or infused in neutral alcohol and water, then sweetened with sugar, with bitter orange peel and gentian root among the defining bittering botanicals; producers vary the recipe with additions such as rhubarb, chinotto, cascarilla, quinine and grapefruit. The signature bright red was traditionally carmine or cochineal and is now commonly achieved with natural colourings such as beet or carrot extract.
The red bitter aperitivo style is associated with Northern Italy, where the archetypal example was created in Novara in 1860.
