History

The Balancio is a variation on the Negroni, the Italian aperitif cocktail most commonly traced to Florence in 1919, when Count Camillo Negroni is said to have asked bartender Fosco Scarselli at Caffè Casoni to strengthen his usual Americano by replacing the soda water with gin, with Scarselli adding an orange garnish in place of the Americano's lemon to mark the new drink. Wikipedia notes the story lacks contemporary documentation, and rival claimants have long muddied the record: some in the Negroni family dispute that Camillo Negroni existed at all, crediting instead a French officer, Count Pascal Olivier de Negroni, with inventing a similarly named vermouth-based drink decades earlier in Senegal, though that claim is undercut by the fact that Campari itself was not created until 1860. The earliest known printed recipes for the Negroni as known today only surface in 1955 guides, and its documented use in France in the 1920s and 1930s (as an equal-parts gin, Campari, and vermouth drink) predates firmer proof of an Italian written record. The Balancio takes this equal-parts template and swaps in a berry cordial for part of the formula, giving the classic bittersweet build a fruit-forward sweetness.
