The Balancio is a Negroni variation of equal parts London dry gin, a red bitter such as Campari, rosso vermouth, and berry cordial, stirred and served over ice.

Instructions for 1 serving
- Pre-chill a glass
- Stir all ingredients with ice: London dry gin 25 mlRed bitter 25 mlRosso vermouth 25 mlBerry cordial 25 ml
- Strain into the ice-filled glass (preferably over a large cube or chunk of block ice)
- Garnish with a dehydrated apple slice
Tips
- Stir all four equal parts with ice for 20–30 seconds, then strain over a large cube or chunk of block ice so the drink dilutes slowly.
History
The Balancio is a variation on the Negroni, the equal-parts gin, Campari, and vermouth aperitif most commonly traced to Florence in 1919, though that story lacks contemporary documentation. The Balancio keeps the template and adds a berry cordial as a fourth equal part, giving the bittersweet drink a fruit-forward sweetness.
