Passion fruit syrup is a sweetened non-alcoholic syrup flavoured with passion fruit, adding tropical flavour, sweetness and colour to drinks.
Strong tropical passion fruit aroma over a sugar-forward body, with the fruit's tartness softened and diluted by the sweetness.
Sweetening and flavouring a build at once, it is shaken in to carry passion fruit aroma and colour; because the finished form is heavily sweetened, drinks are balanced by accounting for its sugar rather than treating it as fruit juice.
Where it is only a sweet accent, its sugar and body can be matched with simple syrup or another syrup; but where passion fruit is the defining flavour it is effectively irreplaceable except by another passion fruit product, since no unrelated sweetener reproduces its aroma.
Puree is unsweetened or lightly sweetened concentrated fruit pulp that keeps the full fruit acidity and body; the syrup is sugar-dominant, with sweetness leading and acidity and body diluted.
Passion fruit syrup combines sugar with passion fruit juice or pulp — from the fruit of the vine Passiflora edulis — dissolved into a syrup base. The purchased form is heavily sweetened, so it carries far more sugar than the fresh fruit alone.
